If you believe that a meal can be "art," Villa Coucou in The Hague should be on your list. Everything that is put before you is conceived and made in their minds and imaginations, and in their kitchens. They have a pastry chef, even. You can tell from the staff and the chefs you can see from the dining room that This Is a Serious Place. The combinations are elegant and elaborate -- and usually with a twist. Something that looks soft is crunchy; something that looks sweet is spicy; and something that looks normally cooked is actually smoked then cooked. The surprise this time was smoked cucumber slices and smoked cucumber jelly. Also lime caviar -- little tiny white lime "eggs" from an Australian citrus fruit. How can the trouble be worth it? Because it's art. And it's Go See For Yourself. Be prepared to relax and take your time.
