I have eaten in over 70 cities across 17 countries in 4 continents. I have traveled around Turkey and tried many modern and authentic eateries across all price points. Mutfakkoz is the most unassumingly ambitious eatery I've ever been in. The cookery is exceptional; the seasoning, revolutionary. Chef Kürşat Arit is the most Michelin star worthy chef whose food I've ever had the pleasure of sampling. I also cannot praise the bakery staff too highly. The toasted bread that the brain terrine is served with was a revelation. Yes, the menu can be improved and fine tuned, perhaps, to better fit the expected mold for a high-end bistro. However, that would be messing with the sincere love letter the chef has composed for Turkish cuisine and its ingredients. My only wish is to see sweetbreads on the menu next time I'm in town.
