Having been here 4 times in 2025 during the summer, we spoke very highly of this place and it’s amazing pinsa, which at the time was probably one of the best in Viterbo. Yesterday, 8 July we decided to head back, what a disappointment it turned out to be. The service was absolutely pathetic. We were one of 2 tables and waited over 1hr for our pizzas. The pizza, or pinsa, was very dry and overcooked. I understand it’s a crisp pizza, but this was like eating cardboard and did not do justice to what the pizzas once were here. It was a massive change in standard. The truffle chips were miserable pieces of roasted potato with a few flakes of truffle, limp old tasteless truffle. This is compared to when they made proper fried potatoes with a generous grating of fresh truffle. The price is the same, the standard, embarrassingly. To top things off, one waiter had 2 cigarette breaks whilst we were sitting there waiting, disinterested and had no idea what was going on. We had empty glasses and plates on our table for over half an hour. Our table didn’t receive any of the complimentary aperitivo snacks of mortadella and pizza bianca, which is normally provided, and was sitting inside at the bar. I’m so disappointed with this place and held it in such high standards. Unfortunately I will not be returning and I hope for the manager, that he focuses on providing better service staff and go back to the quality and standard of food that once made this restaurant so good.
