Veronese cuisine is not one of the best-known of Italy, but it's eminently worth exploring. It's the fruit of centuries of making do with little, with finding ways to bring joy to long days of cold toil. There are at least two apogees from this tradition, and Aldo's is the place to come to try pearà with bolliti misti (mixed boiled meats; the other one is pastissada de caval, but that's another story and you'll need to go elsewhere for that). Come on time to Aldo's (lunch only--get there around 1), sit down, and don't order a primo piatto, which are good, but the specialty here is the main course (the secondo). Ask for the carrello--the cart-- and get some of each of the boiled meats (avoid the lite, non-traditional options they now offer to cater to the diet-conscious business lunch crowd; you are here for the traditional fare). There will be beef, tongue, chicken or turkey, ham, and the quivering velvety stickiness of cotechino. They will cut your meat on the spot and serve it on your plate. You should ask for a nice selection of cooked vegetables on the side. And then they will bring the star of the meal, the pearà. Do not on your life refer to it as gravy. It's made out of dried bread, bone marrow, and excellent quality meat broth, not the crappy drippings that happen to fall out of a roast. It is cooked carefully and for a long time to get just the right texture. It has just the right amount of pepper added to it to earn the name pearà ("peppered). Generously slather all of the meat with the pearà. Try and detect the flavor of the pepper, the marrow, and the long-cooked bread. Enjoy the interludes of bitter vegetables on your palate. Guzzle abundantly whatever wine they suggest will abbinare well. Hear the echoes of the middle ages talking to you through your palate. Aldo's is a real-deal old school neighborhood eatery of the kind that they just don't make any more. If you like real places where real old-school Italians eat, Aldo's is for you. If you need somewhere that looks fancy to feel like you are eating something special, then there are plenty of other places in town where you can pearà, but I'll take Aldo's any time. It's a block from the train station and worth planning your train trip on the Milan-Venice line just for a lunch here. Last time I was there, big pile of bolliti, a huge bowl of pearà, a massive side of veggies and water came out to 16 euros.
