I was really excited to try one of the latest Bibs in Cagliari, but sadly I didn’t love it. The ambiance, lighting and design could be improved, but it was the food that was really lacking. The ideas were incredibly interesting. Reinterpreted tradition with a twist. I wish that flavours matched the creativity. Service was efficient but felt more robotic than it should be. The tiny cold and soggy semolina meatball offered as an opening, the spreadable mousse so salty as to be inedible, sa pudda prena, a traditional Sardinian recipe, reduced to a sort of moist omelette, which had absolutely nothing of pudda prena and accompanied by a sprig of very salty spinach. All these great disappointments, together with some very beautiful but not very exciting red turnip culurgiones on the palate, lead me to give only two stars to the food, even if the frattau bread, the different types of bread and the desserts were very good. The suckling pig I saw being served looked excellent. The dining room staff is very courteous and knowledgeable. The room is not adequately finished but the crockery and cutlery, especially the knives, are beautiful. The baskets, cork trays, prints and objects displayed on the walls are also very beautiful. There is only room for improvement and there is certainly the potential to do so but, in my opinion, the authentic flavors of tradition should be respected.
