Cooking directions

Ingredients

  • 2 cup all-purpose flour + 1/2 cup
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup shortening
  • 1/3 cup butter, room temperature
  • 1/4 cup applesauce
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 15 Oreos

1. To begin, preheat your oven to 350 degrees and line a baking sheet with parchment paper. Next, using an electric mixer with a whisk attachment, beat together the sugars, shortening, and butter until the mixture is light and fluffy. Add in the vanilla extract and applesauce, then mix until everything is well combined.

2. In a separate medium-sized mixing bowl, whisk together 2 cups of flour, baking soda, and salt.

3. Swap out the whisk attachment on your electric mixer for the paddle, then add dry ingredients to the wet mixture. Mix everything together until the dough is workable and doesn't stick to your hands. If the dough is still sticky, add in a handful of flour. Finally, fold in the chocolate chips and set aside 1/2 cup of flour in a separate bowl.

4. Using the reserved flour, coat your hands and roll the dough into 2-inch balls. Place the ball on one hand and press lightly using the palm of your other hand to spread the dough into a circle that's big enough to fit an Oreo cookie in the center. Wrap the edges of the cookie dough around the entire Oreo, molding as necessary.

5. Place the cookies 2 inches apart on the baking sheet, and coat your hands with more flour as needed to prevent sticking. Bake for 10 minutes or until golden brown, then let them sit on the pan for 2 minutes before transferring to a cooling rack.

6. Note: Be sure to space out the cookies enough to prevent the edges from baking together. Stick to 9 cookies per sheet instead of the typical 12.

Take these delectable vegan cookies, studded with rich chocolate chips and crumbled Oreos, every time you crave a bit of indulgence. Whether it's a special occasion or just a random day, these homemade treats will never disappoint. And if you happen to find yourself in the Big Apple, don't miss out on the chance to savor a piping hot cappuccino, paired perfectly with these fragrant cookies, at any one of the city's charming cafes. A stroll through the bustling streets of New York, with the aroma of America's finest baked goods wafting through the air, is an experience you'll cherish for years to come.
