Ayam Goreng Kremes is Indonesian Fried Chicken. Kremes means "crunchy" in the Indonesian language. But unlike regular fried chicken, this Indonesian version is first boiled with aromatics and spices and then deep fried. The crunchy element in this dish is not the chicken skin, but the crunchy spiced batter served with it. Try your hand at preparing this succulent fried chicken with our recipe, and you will never cook fried chicken any other way.

Ingredients

  • 900gms chicken legs/thighs
  • 2 onion
  • 5 cloves of garlic
  • 70gm turmeric
  • 60gm palm sugar
  • 50gm galangal
  • 1 bay leaf
  • 50gm coriander powder
  • 40gm cumin powder
  • 120gm all-purpose flour
  • 70gm grain flour
  • 15gm baking powder
  • 40gm paprika powder

Step 1. In a large pot, sauté the onions, garlic, galangal, cumin, coriander, and palm sugar. When these ingredients release their natural oil, add the chicken legs, sauté for 3 minutes, and add water. Finally, add the bay leaf, turmeric, and salt to the pot and boil the chicken till it is tender. 

Step 2. Strain the chicken from the cooking liquid and keep it aside. Add the gram flour, all-purpose flour, and baking powder to the cooking liquid. Whisk it well to make a smooth batter. Add some salt and paprika powder to the mix.

Step 3. Heat a large frying pot with oil to 370 Fahrenheit. Coat the cooked chicken legs in the batter and deep fry them in the oil until golden brown. Next, keep them on a cooling rack to drain the excess oil.

Step 4. Finally, fry the batter in thin streams to prepare the crunchy flakes and serve the chicken with them.

Tip. Serve lemon wedges and sambal with the Ayam Goreng Kremes.
