I worked in catering for 12 years, and precisely to facilitate the work of the restaurateurs on Easter Monday I thought of booking a table for 5 well in advance, to avoid problems and give the managers a chance to organize themselves. We ordered and the starter arrived shortly after, with hazelnut bread offered. Once that was over, we had to wait an hour and a quarter before seeing the first courses, because in the meantime they were serving a large group of tourists. Needless to say, everyone present no longer felt hungry, I made a terrible impression on our foreign guests who looked at me perplexed, but the best was yet to come. We were thinking of leaving when the first courses finally appeared, which did not arrive together, but slowly “in installments”. First a soup, ten minutes later two pasta dishes, another 10 minutes later another pasta. The last dish arrived on the table when most of us had finished the meal. To end this lunch that had turned into agony as soon as possible, we canceled two side dishes, which at that time were among the dishes that had not yet arrived, to the obvious disappointment of the staff who made it a point to specify, without apologizing, that it had been difficult to manage the group. Which I don't doubt, and I understand that it's not pleasant to work under pressure, but that's why we work with reservations on special days like Easter Monday, to avoid a complete disaster like today's. No apologies from the manager at the time of the bill and service fee included in the total (for the gesture, I was ashamed for them). Having worked in restaurants for many years, I have always been understanding in the face of any unforeseen event, but here there was no unforeseen event: just the greed of wanting to take as many reservations as possible despite the obvious inability to manage so many seats. It was enough to take fewer bookings or spread them over a longer period of time. It was enough to have a minimum interest in treating the customer.
